From my experience I can say that SymRDP is working really fast with Windows based RDP servers via Wi-Fi or 3G connections and it is still usable in most cases even over slower GPRS connection.
About SymRDP usage with iRAPPserver on Mac computer. We didn't test it, so it is hard to say right away something certain about this case. Please try to reduce the value for "Color depth" parameter for RDP session in SymRDP configuration (RDP link in SymNC) and see if that will help. What connection type are you using in this case on your phone, is it Wi-Fi, 3G or GPRS? What is the speed for this connection? Can you access this Mac computer from RDP session from another, preferably Windows based computer, if so, how speed is in this case? Can you access Windows based RDP server from your phone via same connection and see how is speed in this case?

Please have a look at this paragraph: "4.3.1.3 Mac" on page #30 in SymNAS User Guide. Hopefully it may provide some help.
